A Culinary Treasure From Greece

Imagine you are on a Greek Island and  sitting at an outdoor cafe overlooking the  Mediterranean Sea.  You marvel at the wonders of ancient Greece and the cool sea breeze stimulates your appetite as you taste a spoonful of Avgolemono soup!   The taste of lemon mixed with chicken broth, pieces of chicken, orzo, and carrots is savoring as you watch the fishermen dock their boats!  You agree with the culinary experts that Avgolemono soup is truly a Greek cuisine delight!
 
The following Foodie Furecipe will take you to the enchanted shores of one of the Greek Islands!   Enjoy this wonderful soup as your thoughts and taste buds travel to the timeless Greek culture.  You will agree that Avgolemono soup is truly a true gift from Greece! 
 

  

Avgolemono Soup  
 
(When possible try to use organic ingredients.)
 
 
Ingredients:

1 organic 3 pound whole chicken 
4 cups of low salt organic chicken broth
4 cups of water
Salt and pepper according to taste
2 diced celery stalks
2 peeled and diced carrots
1 peeled and diced potato
1 cup of brown or white rice or orzo
2 eggs
Juice from 1½ lemons
 
 
Directions:

Clean and wash chicken 
Boil chicken together with vegetables in chicken broth and water over low heat  
Continue to cook for 1 hour
After 1 hour remove chicken from the pot, remove the skin, and cut it into cube size pieces.
Place the chicken on a platter with the cooked vegetables.
Strain broth from the pot, and add rice or orzo.  Simmer the rice or orzo until cooked. 
When the rice or orzo is cooked, in a separate bowl beat the 2 eggs well with a whisk. 
Add lemon juice, some broth and beat the eggs again.
Pour mixture gradually into pot (removed from heat) and  keep stirring as you pour the mixture into the broth.
Place the pot over very low heat and stir until the soup is slightly thickened.  
Place the chicken and vegetables back into the pot and thoroughly heat.
Remove pot from heat and let stand for 5-10 minutes before serving.
Garnish with two lemon slices and serve.
